How you doing?

I promised my Scottish friend Sarah that my next post on the blog also would be in English.

"How you doing?"
Ja, det kunne godt lyde som starten på Joey fra Venners scorereplik. I dette tilfælde henviser jeg dog til, noget jeg oplever hver dag. Hver morgen når jeg finder min morgenmad i køkkenet, eller når jeg er på vej ud af døren møder dette spørgsmål mig. Standardsvaret fra de fleste er "Fine, thank you". "How about you?". Nogle gange får man dog en længere fortælling om deres humør og grunden hertil, hvilket faktisk er skidehyggeligt.

Det er længe siden, at jeg har postet en opskrift er på bloggen. Det har altså ikke været ensbetydende med, at jeg ikke har spist ;) Jeg har endda også spist lækker og sund mad, men det var primært været en del af de opskrifter, der allerede ligger på bloggen.

Men i dag får I en opskrift på en lækker wokret, jeg lavede i sidste uge

Du skal bruge
2 kyllingebryster
2 rødløg
2 fed hvidløg 
1 peberfrugt
4 forårsløg
Saften fra 1½-2 limefrugter
2 spsk. fiskesauce
1 tsk. sukker
1½ spsk. soya
Evt. 1 spsk. sød chilisauce 
1 tsk. salt
En kvart tsk. peber
Neutralsmagende olie til at stege i

Først halveres rødløgene, og skrællen pilles af. De hakkes derefter i mindre både. Løgene svitses herefter i olien, men de resterende grøntsager hakkes. Hvidløget hakkede jeg også blot i skiver. Peberfrugtene skar jeg i mindre tern, og til slut hakkede jeg forårsløget i skiver. Kyllingen skar jeg i mindre tern. Når rødløgene begynder at blive bløde, smed jeg kyllingen i gryden og lod den dampe i 10 min. under låg. Herefter smed jeg hvidløg, peberfrugt og til sidst forårsløg ved. Retten lod jeg simre 10-15 min. til, at kyllingen var gennemstegt, mens peberfrugten stadig havde lidt bid. 

Til sidst tilsættes retten limesaft, fiskesauce, sukker og soya. Jeg syntes min wok manglede lidt smag, så jeg tilsatte en spsk. chilisauce samt salt og peber. Jeg elsker den sursøde kombination, der opstår i retten. Man kan vælge at tilsætte mere lime til retten, hvis man finder den for sød. 

Jeg serverede min wokret med nudler (ja, det er minutnudler fra en lille pakke - men ikke tilsat krydderierne fra pakken ;) ). Jeg lavede kun mad til mig selv, hvilket betød, at jeg havde nok til både aftensmad i går og frokosten i dag. Elsker at have rester med på madpakken.

“How you doing?” Well, this could almost sound like Joey from Friends hitting on another girl. In this post, I do refer to something a bit different. It is something I experience every day in Aberdeen. Every single morning when I enter the kitchen or when I have on my way out. Usually, people always answers, “Fine, thank you” when the question occurs. At other times, people tell me about their day and their mood. I find these conversations quite nice. Sometimes they even make my day.
It has been long, since I posted a recipe on the blog. It does not mean that I have not eaten ;) I have even eaten quite nice and healthy food. Primarily the food, I eat are already recipes on the blog. Yes, I have not experimented a lot since arrival.

Today, I would like to share a recipe with you. Last week, I made a Thai inspired wok dish. It was quite tasty ;)
You will need:
Two chicken breasts
2 red onions
1 red pepper
2 cloves of garlic
4 spring onions
The juice of 1½-2 limes
2 tablespoons of fish sauce
1½ tablespoon of soya sauce
1 tablespoon of sweat chili sauce (It can be left out)
1 teaspoon of salt
¼ of a teaspoon of black grounded pepper
Oil to cook in

First, haven the onions and pill them, and cut them into thin pieces. Fry the onions in the oil in a pan, while you chop the rest of the ingredients. Chop the garlic into fine slices. Chop the peppers into small squares. Lastly, chop the spring onions into slices.

Chop the chicken on a different cutting board. I chopped the chicken into small cubes. While the onions start to soften, put the chicken into the pan and let it, simmer for 10 minutes with a lid on. Then put the garlic, pepper and lastly the spring onion in the pan. Let the dish simmer for 10 to 15 minutes, until the chicken is cooked and the peppers still are a bit firm.

Lastly, add lime juice, fish sauce, and sugar and soya sauce. I added the sweat chili sauce afterwards, as I thought the dish needed a hint of chili. I love the sweat and sour combination in this dish. If you think the dish is too sweat, you can add a bit more lime.

I served my wok dish with noodles. Yes, the ones from the small packages but without the spices, though ;)
I only cooked for me that evening which meant I had enough food for both dinner and lunch the next day. I really enjoy bringing leftovers in my lunch box the next day.
